Usage:
To make biryani, a fragrant rice dish with meat or vegetables, heat oil in a large pot and fry sliced onions until golden. Add ginger-garlic paste, salt, red chilli powder, turmeric powder, garam masala and yoghurt and cook for a few minutes. Add chicken pieces or mixed vegetables and cook until tender. In another pot, boil basmati rice with water, salt, cardamom pods, cloves and bay leaves until almost done. Drain the rice and layer it over the chicken or vegetable mixture in the first pot. Sprinkle saffron water, fried onions, chopped mint and coriander leaves over the rice. Cover the pot with a tight lid and cook on low heat for 15 minutes or until the rice is fluffy and aromatic.
To make korma, a creamy curry with meat or vegetables, heat oil in a pan and fry chopped onion until soft. Add ginger-garlic paste, salt, coriander powder, cumin powder, turmeric powder and bay leaf and cook for a few minutes. Add chicken pieces or mixed vegetables and cook until browned. Add water or stock and bring to a boil. Lower the heat and simmer until the chicken or vegetables are cooked. Add cream or coconut milk and simmer for a few more minutes. Garnish with chopped coriander leaves and serve with naan bread or rice.
